Here’s a great way to satisfy your sweet tooth no matter the time of day. Make a single-serving sized microwave brownie mug (and try to keep it from the clutches of your husband. . . or make him one too).

Ingredients
  1. 1/4 cup sugar
  2. 1/4 cup all purpose flour
  3. pinch of salt
  4. 1 tbsp unsweetened cocoa
  5. 1 tbsp vegetable oil
  6. 3 tbsp water
Instructions
  1. Add all the dry ingredients to your coffee mug, then stir in the oil and water until everything is well blended.
  2. Cook uncovered in your microwave for approximately 1 minute and 40 seconds (depending on your microwave).
  3. Let it cool a bit, because the mug and the brownie will be hot.
  4. It’s delicious straight out of the cup, but you can also add a scoop of ice cream or whipped cream for extra tastiness.
Notes
  1. Makes a great chocolate treat for one.

Who Knew Ramen Could Taste So Good

I made a new salad favorite for Easter last weekend — Ramen Noodle Salad. It’s super easy to make and customize to your own taste; plus, it seems to be a crowd pleaser, judging by the lack of second helpings to be had. The basic recipe was posted online by Food.com

Ingredients
  1. 12 oz bag coleslaw mix
  2. 1 pkg Oriental flavored ramen noodles (raw & crushed)
  3. 3/4 cup unsalted roasted sunflower seeds (or more to your taste)
  4. 3/4 cup dried cranberries (or more to your taste)
  5. 1/2 cup vegetable oil
  6. 1/4 cup apple cider vinegar
  7. 1/4 cup sugar
Instructions
  1. In a large bowl, mix together the coleslaw, crushed noodles, sunflower seeds and cranberries.
  2. In a small bowl, mix together the Ramen noodle seasoning packet, oil, vinegar and sugar.
  3. Stir everything together, cover and refrigerate over night.
Notes
  1. You can add many different items to your salad according to your taste, like almond slices or other nuts and berries.

Popcorn is in the Bag

paperbagI love to snack on fresh popcorn but sometimes I hate to drag out the loud air popper, especially if my son is sleeping right down the hall. So I finally tried the microwaveable brown paper bag technique I’ve heard about for years, and it works like a dream.

Just add about 1/3 cup of uncooked popcorn to a lunch-size brown paper bag, fold over the top a couple of times and microwave it between two and three minutes, depending on your microwave. Let it cool for a bit, pour it into a bowl and top with salt and/or butter. It’s yummy, quick and easy.
