Milk-Free, Fizzy Water Pancakes

It has a busy season (as usual) at the Three-Acre Wood and I’m quickly becoming thankful for the slower pace of this year’s Thanksgiving festivities. Since we didn’t travel, it gave us a few extra days to get Christmas in order and roll into the holiday season without being completely behind. Oh, I’m still behind; just not completely. On top of everything else, my husband found himself on a temporary restricted diet, so I got a little creative with meal prep and discovered a few new delicious recipes. Although hubby is back to eating normal, our family decided to keep one of our new dishes in the regular breakfast lineup — Fizzy Water Pancakes. 

I wanted to pass along this recipe because I think it might be helpful for people with several different types of dietary restrictions, especially folks with a milk allergy or intolerance. Instead of dairy products, these fluffy pancakes get a lift from carbonated water, but one would never know. Our son has gone as far as claiming them as the “best pancakes ever.” He’s ten. Take his culinary review with caution, but I do have to agree that they are quite tasty.

Fizzy Water Pancakes

Pancake recipe that uses carbonated water instead of milk

Cook Time 10 minutes

Ingredients
  

  • 2 c all purpose flour
  • 1/4 c sugar
  • 4 tsp baking powder
  • 1/8 tsp baking soda
  • 1/2 tsp salt I use non-iodized
  • 2 egg whites
  • 3 tbsp oil I use canola oil
  • 2 tsp vanilla extract
  • 1 1/2 c carbonated water (unflavored) I use Sanpellegrino

Instructions
 

  • Warm a skillet to medium heat.
  • In a large mixing bowl, combine all the ingredients in the order listed.
  • Mix together well, but don't over do it. The batter should be a wee bit lumpy.
  • Wipe warm skillet with oil or a nonstick spray.
  • Pour batter into warm skillet, brown, flip and brown the other side.
  • Serve warm with butter, syrup, peanut butter, fruit or toppings of choice.

It’s a beautiful spring day here at The Three-Acre Wood, and I’ve been spending all of it with my sick little boy who is missing out on field day at school. The poor thing came home with Strep yesterday and now he’s stuck at home with his mama instead of his friends. I venture to say it hasn’t been all bad. We did play a game of Scrabble Jr., he watched Captain Underpants and we just polished off banana popsicles on the back deck. What more can we ask for?

I know I promised you a breakfast casserole recipe earlier this week, so I finally squirreled away long enough to pass it along while my son plays math games on the iPad. I’m sure I only have a few minutes before I’m summoned by the young one, so I will try to make this as quick as possible.

My husband found this Weight Watchers loving recipe online and prepared it for Mother’s Day (he’s kind of mushy and thoughtful like that), but he made several adjustments according to the ingredients he found in the house (also a good trait. . . most of the time). I’m going to share the version he created because it was really good, but you can also find the original at Slap Dash Mom. The Slap Dash Mom registers her recipe at one Smartpoint for a quarter of the dish while my husband’s version came in at three, but it all depends on the type of turkey sausage you use. This really is a very tasty breakfast casserole, so I hope you will give it a try (even if you aren’t watching your weight).

Ingredients
  1. 6 eggs
  2. 1/4 c fat-free cheddar cheese
  3. 1 c cooked fresh turkey sausage
  4. 1/3 c uncooked onion
  5. 1/2 c sliced fresh mushrooms
  6. 1/4 c chopped fresh cilantro
  7. 1/4 tsp ground black pepper
  8. 1/4 tsp garlic salt
  9. 1 or 2 pinches of red pepper flakes
  10. Aldi brand spray olive oil (zero Smartpoints)
Instructions
  1. Scramble the eggs in a bowl.
  2. Add all other ingredients to eggs and stir together.
  3. Spray an 8x8 casserole dish with olive oil.
  4. Pour mixture into dish.
  5. Bake uncovered at 350 degrees for approximately 35 minutes (until eggs are done).
  6. Serve warm.
Notes
  1. You can prep this dish the night before and store covered in the refrigerator, but if you use a glass casserole dish be sure to warm it with the oven or it might crack during baking.

Super Quick Chocolate-Almond Pancakes

If you read the Belgium Waffle with the Works post from yesterday and think it sounds really yummy but super unrealistic for a family on the go or weekday morning fare, then you’re going to love this quick (I mean super quick) delicious alternative. I’m not putting this one in recipe form, because I’m not really “making” anything today. I’m simply taking the similar nutrient-rich ingredients from yesterday’s waffle recipe and making super quick chocolate-almond pancakes.

The secret ingredient here is your favorite boxed, bagged or even bottled pancake mix. Prepare the batter per instructions and right after you pour the batter into the skillet for cooking, plop a few chocolate chips and slivered almonds into the cooking cake. Continue cooking as you normally would and flip to cook the other side. You can top your pancake with strawberries and whipped cream for a similar taste as yesterday’s Belgium waffle, or you might try peanut butter, bananas or the classic butter and syrup.
